  • 500 gr. di cipolla ramata di Montoro
  • Concentrato di pomodoro
  • 3 cucchiai di colatura di alici Delfino Battista
  • Bacche di ginepro
  • Bacche di mirto
  • N.1 cucchiaio di strutto di maiale
  • N.10 tuorli freschi
  • Olio di semi
  • Pecorino romano 150 gr.
  • Pepe nero
  • Per il contorno: rughetta selvatica
  • Sedano, carota, cipolla fresca 200 gr.
  • Vino bianco secco 2 bicchieri
  • Spalla di maialino nero casertano 500 gr.

Preparation

Finger food: mini cereal rolls, Caserta black pork genovese, colatura di alici, salted zabaione with pecorino and colatura di alici.

For the genovese: brown the pork in extra virgin olive oil with garlic and fresh thyme. Deglaze with white wine, add the onions cut into brunoise and a little vegetable stock. Cook over a very low heat for at least 4 hours, until the meat falls apart and the onions become a cream. Adjust with colatura di alici — no salt.

For the salted zabaione: in a bain-marie, whip the egg yolks with the pecorino, a drop of white wine and colatura di alici until a light, frothy cream forms. Do not add salt.

Slice the mini cereal rolls in half, fill generously with the genovese and finish with a spoonful of salted zabaione with pecorino and colatura di alici.
